Melrose crumpets





Warning: these crumpets are addictive. Once you’ve tasted them, you’ll want to make them every day!

Makes 30
125 ml (1/2 cup) oil
125 ml (1/2 cup) full-cream milk
3 eggs
30 ml (2 T) Melrose Cheese Spread
375 ml (1 ½ cups) cake flour
pinch of salt
10 ml (2 t) baking powder
oil, for frying



Whisk the oil, milk, eggs and Melrose spread together. In another bowl, mix the dry ingredients and make a hollow in the center. Add the Melrose mixture and mix to form a smooth batter. Leave to stand for at least 10 minutes. Heat a little oil in a pan and drop spoonfuls of the batter onto the hot surface. When bubbles rise to the surface of the crumpets, turn them over and cook on the other side, until golden brown and cooked through. Serve the crumpets warm with extra Melrose Cheese Spread and syrup or honey on the side
